Chinese food differs greatly from region to region as you move across the country. The developement of the cuisine has developed from many chinese hardships and famine. During years of poor agricultural harvest, the Chinese would eat anything in means of staying alive. This is when they discovered the many unique and interesting ingredients they use in their cooking today. Methods of cooking came about by the lack of cooking fuel. By cooking the food at high heats for a short amount of time, it allows vegetables to be cooked and still remain crisp and fresh. Also the meat and vegetables are cooked together so there are fewer calories and the food retains most of its vitamins and minerals.
